Shawn Doolin

Executive Chef

Knowing he wanted to be a chef by the tender age of 13, Shawn immersed himself thoroughly in every aspect of culinary arts taking on his first full-time job at a hotel on the Jersey Shore at 17. Returning to his home town, Chicago, Shawn attended Kendall College, and was exposed to the varied culinary community that the city has to offer. Shawn joined Chicago’s fine dining sphere and worked at Les Nomades, Zealous, Carlucci’s and Le Francais honing his skills in diverse cuisines.

After 20 years of off-premise catering Shawn is most delighted to be working at Venue One with its very own restaurant quality kitchen.

Shawn is a two-time winner of The Jean Banchet Award for Culinary Excellence for Best Catering Company in Chicago, during his tenure at Entertaining Company. He brings to VO over 20 years of off-premise catering, fine dining and hotel experience. His love for travel is matched only by his passion for cooking. Well known for his modern style, and fresh, innovative approach to food, as well as being well versed in diverse cuisines.

In his free time Shawn has been a culinary instructor at his alma mater, Kendall and has been involved with Meals on Wheel and Cystic Fibrosis Board of Directors.
